This marshmallow recipe is a result of a long empiric trial period by Pattie.

Ingredients

Gelatin mixture

  • 2 envelopes gelatin

  • ½ cups cold water

Syrup

  • 2 cups sugar

  • ½ cup light corn syrup

  • ¼ cup water

  • Pinch of salt

Egg mixture

  • 4 egg whites

Taste

  • 1 tbsp vanilla flavoring

Preparation

Put the gelatin in the water to dissolve. Let sit while doing the rest.

Enter all syrup ingredients in a pot and heat. When syrup reaches about 220oF, start working on the egg whites (below). Heat syrup to 250oF.

Whip the egg whites to thick and fluffy, soft peaks.

Add the sugar mixture to the egg mixture while mixing. Add melted gelatin (either by 30 sec in the microwave or dumping into the pan cooking the sugar after adding the sugar to the egg whites). Mix until volume stops increasing. Then add the vanilla and mix until it is evenly distributed.

Pour into pan buttered and dusted with powdered sugar.

Cut into squared and dust with powdered sugar.

Optional: Dip in your favorite melted chocolate.
